Sambal cuttlefish

I will let you on a little secret, I cannot resist sambal cuttlefish.
Without fail, I will always order this dish at the Nasi Padang stalls. I can't explain why this is my favourite dish at the Nasi Padang stalls, perhaps it has to do with the texture of the cuttlefish and the dark red sambal.

I came across the nicely packed cuttlefish at the local supermarket and remembered the big batch of sambal paste in the freezer (balance from making the sambal stuff fish and sweet potatoes leaf curry) and so this become dinner.

You can have this dish in under 15mins if you have ready sambal in your fridge

This is my kind of fast food.





You will need:

Spice paste(ground)
4 fresh red chillies
10 dried chillies (soak in hot water till soft, drained)
2 cloves garlic
1-inch turmeric
10 shallots
1teaspoon belachan
1 stalk lemongrass

1 cuttlefish, cut into stripes
1 tablespoon of tamarind mix with 1 tablespoon of water
1 teaspoon sugar
pinch of salt


Method:
  1. Ground all the ingredients in the food processor into a paste.

    2.  Heats 2 tbsp oil on low heat, stir fry the paste until the oil oozes from the paste, separated from the oil.


    3. Add in cuttlefish strips, stir fry till cook, about 1-2 minutes

    4. Add tamarind juice, sugar and salt, adjust to desired taste. Serve hot
