Pineapple bittergourd salad

I am always excited when I get invited to home cooked meals. It is almost guaranteed we will be well-fed with the food lovingly prepared. Through these home cooked meals, we get a prelude of our host culture, heritage and lifestyle.
At the recent cell meets, PT's helper, Joselyn made this wonderful refreshing salad. I don't usually ask for the recipe, but this is so deliciously good!
If you think that these ingredients make an odd combination, well you will be blown away just like I did.
I made a bowl today to accompany the fried fish dish for dinner tonight and watched my sceptical sister took a bite, her face lightened up, and then I have to stop her from finishing it.
So here you are, Joselyn's pineapple bitter gourd salad. Enjoy!
You will need:
1 tablespoon of salt
1 pineapple cored and sliced
1 bitter gourd, sliced thinly
half teaspoon of oregano
3/4 cup distilled vinegar
1 cup sugar
Dash of sesame oil
cut fresh chilli for garnish
Method:
- Sprinkle salt to bitter gourd and let it sit for about 15mins, then rinse and squeeze dry the bitter gourd.
- Boil the sugar and vinegar till sugar dissolved, leave to cool.
- Combined sugar vinegar, sesame oil, oregano to the pineapple and bitter gourd.
- Chilli for garnish.
Cook's Note:
Oregano and sesame oil NOT optional.
Best eaten chilled
